Recipe: Oak Planked Peppercorn Tuna Steaks With Orange Mayonnaise

1 15x6 1/2x 3/8-inch oak grilling plank
1/4 cup low-fat mayonnaise
1/4 tsp. fresh orange zest
2 Tbsp. fresh orange juice
2 tsp. fresh chives
4 (6-ounce each) bluefin tuna steaks
Cooking spray
1/2 tsp. salt
2 Tbsp. mixed peppercorns
Makes 4 servings (each 1 steak and 1 1/2 tablespoons orange mayonnaise).
Immerse and soak plank in water 1 hour; drain. Heat 1 side of grill to
medium and 1 side to high heat. In bowl, combine mayonnaise, grated zest
(colored part of rind only, removed with grater or zester), juice and
chopped chives; stir well with whisk. Chill. Lightly coat top of tuna (about
1 inch thick) with cooking spray. Sprinkle tuna with salt; firmly press
crushed peppercorns into tuna. Grill plank on rack over high heat 5 minutes
or until lightly charred. Carefully turn plank over; move to moderate heat.
Place tuna on charred side of plank. Cover and grill 10 minutes or until
desired degree of doneness. Serve tuna with mayonnaise.
