Recipe: 3 Cheese Turkey Casserole

2 tablespoons olive oil
1 1/2 cups celery, chopped
2/3 cup green bell pepper, chopped
1/3 cup onion, chopped
1 can (10 1/2 ounces) cream of chicken soup
2/3 cup milk
1/2 cup sour cream
2/3 cup cheddar cheese, grated
2/3 cup mozzarella, grated
2/3 cup Gouda, grated
1 package (8 ounces) elbow noodles, cooked
1 package (4 ounces) frozen broccoli, thawed and drained
2 1/2 cups cooked turkey, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon nutmeg
1 additional cup of cheese for topping, cook's choice

1. Heat olive oil in a large skillet. Saute peppers, celery and onion until
tender.

2. Add the next 6 ingredients. Heat the mixture on low, stirring until
cheeses have melted.

3. Mix together cheese sauce, cooked noodles, broccoli, turkey and
seasonings.

4. Lightly grease a 9x13x2-baking dish. Pour mixture into dish.

5. Top with a cup of cheese of your choice. Bake for 40-45 minutes at 350
degrees or until golden brown.
