Recipe: Cheese Fondue

Serves 6.

1 clove garlic, halved
9 ounces Gruyere, cubed
9 ounces Emmental, cubed
1 cup dry white wine
2 teaspoons kirsch
1 teaspoon cornstarch
1 teaspoon creme fraiche
Salt and pepper, to taste
1 large loaf crusty French bread, cut into cubes

1. Rub the bottom and sides of a heavy 4-quart saucepan with the cut sides
of the garlic; discard the garlic.

2. Place the cheese in the pan. Over the lowest setting on the burner, melt
the cheese, stirring occasionally. This will take about 45 minutes.

3. Stir in the wine and kirsch and cook about 5 minutes.

4. When the liquid starts to separate from the cheese, stir in the
cornstarch, then the creme fraiche. Add salt and pepper to taste and
transfer to a fondue pot set over a flame. Serve with the bread cubes.
