Recipe: Holiday Rack Of Pork

1 center loin pork roast -- (4-5 pounds), *See Notes
2 cloves garlic -- peeled
coarsely ground pepper
Cut garlic cloves in half, and rub over all surfaces of loin; sprinkle
generously with black pepper. Place in preheated 350F oven, with bones u

on rack in shallow roasting pan. Roast 1 to 1 1/2 hours (about 18-20 minute

per pound) until meat thermometer placed in center of in eye reads about
155F. Remove from oven, let rest 10 minutes. Cut between rib bones to
serve.
