Recipe: Salmon Steaks With Spinach Yogurt Pesto Coo

Salmon Steaks with Spinach-Yogurt Pesto - Coo
Yield: 12 Servings
1 pk Frozen chopped spinach;
-thawed and well
; drained (10-oz)
1/2 c Fresh basil
1/3 c Parmesan cheese
2 Cloves garlic
1/2 ts Sugar
1/4 ts Nutmeg
1/4 ts Salt
1/4 ts Pepper
8 oz Plain nonfat yogurt
2 lb Fresh salmon steaks;
-swordfish or tuna
; steaks
Process all ingredients except the yogurt and fish in
a blender or food processor until the mixture is just
short of smooth. Add the yogurt and process the pesto
until smooth.
Grill or broil the fish 4 inches from the heat source
for approximately 10 minutes or until cooked. Spoon
the pesto over the fish and serve.
