Recipe: Aduki Orzo And Pepper Salad

2 c Cooked aduki beans
2 c Cooked orzo pasta
1 c Finely diced crunchy fennel
1 c Slivered roasted red peppers
1/4 c Finely sliced black pitted
-olives
1/2 c Packed Italian parsley;
-chopped
1/2 c Dressing made with olive oil
--balsamic vinegar; garlic
Salt and freshly ground
-black pepper
Crumbled goat or feta
-cheese; for garnish
Mix the ingredients together and season with salt and pepper; garnish with
cheese.
Yield: 4 servings
