Recipe: Cherry Tomatoes With Smoked Fish Pate

40 Cherry tomatoes
1/4 lb Smoked fish; (smoked
-bluefish or smoked
Salmon)
2 tb Chopped shallots
3 tb Softened butter
1 lb Softened cream cheese
3 tb Finely mined parsley
2 tb Lemon juice
Salt and freshly ground

Heavy cream
Wash the tomatoes and cut off a thin slice on top.
Scoop out insides with small spoon (leave the center
pulpy ridge in if you prefer). Break up the smoked
fish, break it with your fingers into bits and blend
it. Firmer-textured smoked salmon bits will need to be
ground or processed.
Combine fish with shallots, butter, cream cheese, and
2 tablespoons parsley. Season with lemon juice and
salt and pepper. Thin, if desired, with heavy cream to
a smooth consistency.
Fill each tomato shell and refrigerate until ready to
serve. Sprinkle the tops with remaining chopped
parsley. (Makes about 2 1/2 cups filling)
Note: Depending on the type of fish, you may want to
vary the amount of cream cheese and butter. For
example, a very salty salmon may require more cheese
and no salt. Judge to taste.
* With smoked salmon, use chopped dill in combination
with parsley. Garnish with dill.
