Recipe: Chili Con Carne

2 Tbs. vegetable oil
1 cup coarsely chopped onions
1 cup coarsely chopped green bell peppers
2 tsp. minced garlic
1-1/2 lbs. lean ground beef (or ground turkey)
2 cups canned crushed tomatoes
2 cups beef broth
3 Tbs. chili powder
1 tsp. ground cumin
1 tsp. salt
1/2 tsp. cayenne pepper
1/2 tsp. dried oregano
15 oz. can kidney beans, rinsed and drained
In a large stock pot over medium heat, add the oil. Add the onions
and green bell peppers and saute until softened, 3 to 5 minutes,
stirring frequently. Add the garlic and cook for 1 minute, stirring
constantly. Add the ground beef and cook for 5 to 8 minutes, or until
just cooked through, using a fork or spatula to break up the meat
into small pieces. Add the tomatoes, broth, chili powder, cumin,
salt, cayenne pepper, and oregano and stir to combine. Bring to a
boil. Add the kidney beans. Reduce the heat and simmer for 45
minutes, or until thickened and the flavors have melded, stirring
occasionally.
