Recipe: Angel Hair Pasta Winter

3/4 lb Capellini/angel hair pasta
1 lg Cn (15-16 oz whole tomatoes
(crush, remove seeds optl)
1 Very sm onion, chopped
1 -2 cl garlic, crushed
Extra Virgin olive oil
2 tb Crushed basil leaves
1/4 ts Oregano
Salt and pepper to taste
Imported Romano Cheese
When fresh tomatoes aren't available, I make a winter version of Angel Hair
Pasta:Cover the bottom of a md saucepan with olive oil approximately 1/4
inch. Saute chopped onion, basil and oregano until onion is light golden
brown. Add garlic and saute a minute or two--DO NOT LE T GARLIC BROWN.
Add crushed tomatoes, salt and pepper, and simmer 20-30 minutes until
flavors cook through. Cook pasta according to package directions. Serve
with fresh grated Romano.
