Recipe: Pretty Zesty Lemon Bars

2 1/4 cups all-purpose flour
1 3/4 cups granulated sugar
4 large egg whites, lightly beaten
11/3 cups finely ground almonds
2/3 cup finely chopped candied lemon peel
Grated zest of 1 lemon
1 teaspoon baking soda
1/8 teaspoon salt
Line a cookie sheet with parchment paper .. Mix the flour, sugar, egg
whites, almonds, candied lemon peel, lemon zest, baking soda, and salt in a
large bowl to form a stiff dough. Press the dough into a disk, wrap in
plastic wrap, and refrigerate for 30 minutes .. Roll out the dough on a
lightly floured surface to a 12 x 3-inch rectangle .. Transfer to the
prepared cookie sheet and refrigerate for 30 minutes .. Preheat the oven to
300°F. . Cut the dough in half lengthwise and slice into 1/2_ inch strips ..
Bake for lO-15 minutes, or until just golden .. Transfer to racks to cool.
