Recipe: Cook Quick Butterscotch Brownies

Cook-Quick Butterscotch Brownies
Yield: 30 Servings
1/4 c Plus 2 Tbsp.
-margarine;softened
1 1/2 c Firmly packed brown sugar
1/2 c Frozen egg substitute;
-thawed
2 ts Vanilla
2 c All-purpose flour
1 ts Baking powder
1/4 ts Baking soda
1/2 ts Salt
1/2 c + 2 Tbsp butterscotch
-morsels
Vegetable cooking spray
1. Beat margarine at medium speed of electric mixer until creamy; gradually
add brown sugar, beating well. Add egg substitute and vanilla, beating
well. 2. Combine and next 3 ingredients. Add to margarine mixture, beating
well. Stir butterscotch morsels. 3. Spoon mixture into a 13-x 9- x2-inch
pan coated with cooking spray. Bake at 350*F. for 25 minutes or until a
wooden pick inserted near center comes out clean. Remove from oven, and let
cool completely on a wire rack. Yield 2 1/2 dozens.
