1.00 Tomato; diced
1.00 Fresh jalepeno or Serrano
-chiles; very finely diced
; (seeds and fiber
; left in for heat),
; up to 3
0.50 lg Onion; diced finely
0.50 Green pepper; diced finely
0.50 Red pepper; diced finely
0.50 c Cooked black-eyed peas; well
-drained,
; optional, up to 1
Fresh corn kernels sliced
-from 1 cob corn; optional
Leaves from 1 bunch
-cilantro; diced medium fine
0.50 ts Salt; up to 1
1.00 Lemons; Juice of, up to 11/2

Toss all ingredients together, starting with lesser amounts of hot
pepper, salt, and lemon. Taste. Add additional heat, salt, or lemon,
to taste. Serve, raw, as accompaniment.

Yield: 1 3/4 to 2 1/2 cups
