Recipe: Green Radicchio And Egg Salad

6 cups radicchio zuccherino or māche -- washed, dried
1 clove garlic -- peeled and thickly sliced
salt
freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 1/2 tablespoons red wine vinegar
2 hard-cooked eggs -- peeled and quartered
Put dried radicchio and garlic in a salad bowl. Season to taste with salt
and black pepper, then toss with extra-virgin olive oil and red wine
vinegar. Add eggs, then toss gently one more time. Adjust seasoning if
necessary.
