Recipe: Berries and Almond Milk

1/4 cup whole -- raw almonds
1 cup water -- divided
1 medjool date -- pitted
2 cups mixed berries (such as raspberries -- blueberries, and
strawberries)
2 tablespoons maple syrup

1. Combine almonds and 1/2i cup water in a small bowl, cover and let stand 8 hours or overnight. Drain almonds, rinse. Combine almonds, remaining 1/2 cup water, and date in a blender or food processor, process until smooth. Spoon the mixture into a cheesecloth-lined sieve over a medium bowl. Gather edges of cheesecloth together, and squeeze over sieve. Discard solids.

2. Place 1 cup berries into each of 2 bowls. Drizzle each serving with 1 tablespoon maple syrup, and top each serving with 2 tablespoons almond milk. Serve immediately.

Yield: 2 servings.
