Recipe: A Very Good Almond Pudding

A Very Good Almond Pudding
Yield: 4 Servings

1/2 pt Each single cream and milk
Grated rind of 1 lemon
1 Blade of mace
1 Piece cinnamon stick
3 oz Caster sugar
6 oz White breadcrumbs
4 oz Ground almonds
4 oz Almond biscuits; broken into
-small
; pieces
4 Eggs
1/2 ts Nutmeg
1 oz Butter
1 pn Salt
1 tb Candied peel; (1 to 2)
1 tb Currants; (1 to 2)

Bring the milk and cream to the boil, add the mace, cinnamon, lemon rind
and sugar, stir well and simmer for 10 minutes.

In a mixing bowl, place the breadcrumbs and the almond biscuits. Pour in
the milk mixture through a sieve and stir in the ground almonds. Mix
thoroughly.

Leave the mixture to cool to blood heat, then add the nutmeg and salt, beat
the eggs and add along with the candied peel and currants, mix well.

Butter a gratin dish, pour the mixture in and bake it in a preheated oven
at 375F/190C.Gas 5, for about 45 minutes.

Serve with cream.
