Recipe: Beet And Herring Salad

1 cup sugar
1/2 cup Swedish vinegar
1 teaspoon salt
1 tablespoon allspice berries
1 bay leaf
1 red onion -- peeled and sliced
4 cloves garlic -- peeled
2 cups water
5 beets
2 pickled herring filets -- diced
3 potatoes -- peeled, diced, and boiled
1 sweet pickle -- diced
1 apple -- peeled and diced
freshly ground white pepper
Combine 1 cup sugar, 1/2 cup Swedish vinegar, 1 teaspoon salt, 1 tablespoon
allspice berries, 1 bay leaf, 1 sliced peeled red onion, 4 peeled cloves
garlic, and 2 cups water in a pot. Bring to a boil, then cool.
Boil 5 beets until tender, peel, place in a large jar, and cover with
vinegar mixture. Refrigerate for 3 days.
Dice pickled beets and place in a bowl. Add 2 diced filets pickled herring,
3 diced, boiled, and peeled potatoes, 1 diced sweet pickle, and 1 diced
peeled apple. Season with pickling liquid and freshly ground white pepper.
