Recipe: Cauliflower With Oriental Greens

6 oz cauliflower, cut into florets
1 garlic clove
1/2 tsp turmeric
1 Tbsp cilantro root or stem
1 Tbsp sunflower oil
2 scallions
4 oz oriental greens, such as Thai
spinach, bok choy, or mustard greens
1 tsp yellow mustard seeds
1. Blanch the cauliflower, rinse in cold running water, and drain. Set aside.
2. Grind the garlic, turmeric, and cilantro root or stem together with a pestle and mortar or in a spice grinder.
3. Heat the oil in a wok or large, heavy skilet. Add the scallions and stir over high heat for 2 minutes. Add the greens and stir 1 minutes. Set aside.
4. Return the wok or skillet to the heat and add the mustard seeds. Stir until they start to pop, then add the turmeric mixture and the cauliflower, and stir until all the cauliflower is coated. Serve with the greens on a warm serving plate. Serves 4.
