Recipe: Angel Food Cake Pudding

Yield: 20 Servings

2 c Skim milk
2 Egg yolks; beaten
1 c Sugar
1 pk Unflavored gelatin
1/4 c Cold water
2 Egg whites
1 sm Can crushed pineapple in
-juice; drained
2 c Cool whip LiteŽ
1 c Coconut flakes
1 c Powdered sugar
1 sm Bottle maraschino cherries;
-chopped
1 Angel cake; whole
--or reduced fat pound cake

Cook until thick and smooth the milk, egg yolks and sugar. Add unflavored
gelatin, soaked in 1/4 cup cold water, to this mixture and let cool. Add to
the cooked custard the beaten egg whites, crushed pineapple, Cool Whip,
coconut, powdered sugar and cherries. Remove all brown from angel food and
break into walnut size pieces. Put a layer of cake into a square or oblong
dish; pour over 1/2 of custard mixture, another layer of cake and custard.
Allow to stand at least 12 hours

You can use instant pudding of your choice, or pie filling in this recipe

gm carbohydrate, 5 gm protein
