Recipe: Oven - Fried Perch

1/2 cup margarine
8 perch or cod or haddock fillets -- 1 1/2 pounds
1 egg -- well beaten
1 cup fine bread crumbs
salt -- to taste
pepper -- to taste
lemon wedges -- (for garnish)
1. Melt margarine in baking dish in 325 F. oven. (Do not allow
margarine to brown.)
2. Dip fish first in melted margarine, then in egg, then in crumbs,
coating well; season to taste with salt and pepper.
3. Bake in preheated 375 F. oven 15 to 20 minutes, or until fish tests
done.
4. Garnish with lemon wedges.
NOTE: Delicious, inexpensive dinner, especially when served piping hot
with steamed green vegetables and corn bread.
