Recipe: Apple Smoked Pork With Pepper And Onion

4 cups apple wood chips
2 (1-pound) pork tenderloins
1 teaspoon garlic salt
1 small red or green bell pepper -- cut into 2 x
1/2-inch pieces
1 small onion -- cut into 1/4-inch
slices
Cover wood chips with water; soak 30 minutes.
Drain wood chips. Prepare and heat smoker using wood chips. (For charcoal
smoker, use 5 pounds charcoal briquettes.)
Sprinkle pork with garlic salt. Make diagonal cuts across pork at 1-inch
intervals to within 1/2 inch of bottom of pork. Insert bell pepper and
onion pieces alternately in cuts in pork.
Cover and smoke pork about 3 hours or until meat thermometer reads 160ºF.
