Recipe: Apricot Glazed Burgers With Apriciot Salsa

Apricot Salsa (see below)
1 pound ground turkey breast
2 teaspoons chopped fresh thyme
OR
1/2 teaspoon dried thyme leaves
1/2 teaspoon salt
1/2 cup apricot jam

APRICOT SALSA
4 medium apricots -- pitted and chopped
OR
3 cups frozen sliced peaches -- thawed and chopped
1 medium red bell pepper -- chopped (1 cup)
1 small red onion -- finely chopped
2 tablespoons chopped fresh parsley
2 tablespoons white vinegar
1 tablespoon vegetable oil
1/4 teaspoon salt
Salad greens -- if desired

Prepare Apricot Salsa (below).

Brush grill rack with vegetable oil. Heat coals or gas grill for direct
heat (see "Grilling: Direct- and Indirect-Heat Grilling" tip).

Mix turkey, thyme and salt. Shape mixture into 4 patties, about 3/4 inch
thick.

Cover and grill patties 4 to 5 inches from MEDIUM heat 12 to 15 minutes,
turning and brushing patties with apricot jam after 6 minutes, until no
longer pink in center. Discard any remaining jam.

Serve burgers with Apricot Salsa.

APRICOT SALSA

Mix all ingredients. Cover and refrigerate until serving. Serve salsa
generously on salad greens. About 4 cups.
