Recipe: Mediterranean Linguine

6 ounces whole wheat linguine
Vegetable cooking spray
1 cup sliced fresh mushrooms
1 medium green pepper -- seeded and cut into thin
strips
1 medium sweet red pepper -- seeded and cut into thin
strips
1 clove garlic -- minced
14 ounce canned artichoke hearts -- drained and
quartered
1/2 cup reduced-calorie Italian salad dressing
3 tablespoons sliced -- pitted ripe olives
1 tablespoon chopped fresh parsley
1/2 cup shredded mozzarella cheese -- (2 ounces)
Cook linguine according to package directions, omitting salt; drain.
Transfer to a large bowl, and keep warm.
Coat a large skillet with cooking spray; place over medium heat
until hot. Add mushrooms, green pepper, red pepper, and garlic;
saute until crisp-tender. Add artichokes, salad dressing, olives,
and parsley; stir well, and heat thoroughly. Add to reserved
linguine; toss gently. Sprinkle with mozzarella cheese, and serve
immediately.
Yield: 12 servings (91 calories per serving).
