Recipe: Coffee Butter Cake

2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1/3 cup butter, softened
1 cup firmly packed brown sugar
1 teaspoon vanilla extract
2 large eggs, at room temperature
1 tablespoon freeze-dried coffee granules dissolved in 1/2 cup milk
COFFEE-BUTTER FROSTING
1/2 cup (1 stick) butter, softened
11/2 cups confectioners' sugar
3 tablespoons firmly packed brown sugar
1 tablespoon freeze-dried coffee granules dissolvedin 1 tablespoon boiling
water
Preheat the oven to 350°F. . Butter and flour an 11 x 7 -inch baking pan ..
Sift the flour, baking powder, and salt into a large bowl .. Beat the
butter, brown sugar, and vanilla in a large bowl with an electric mixer at
medium speed until creamy .. Add the eggs, one at a time, until just blended
after each addition .. With mixer at low speed, gradually beat in the dry
ingredients, alternating with the coffee mixture .. Spoon the batter into
the prepared pan .. Bake for 30-40 minutes, or until a toothpick inserted
into the center comes out clean .. Cool the cake completely in the pan on a
rack. Turn out onto a serving plate .. Coffee-Butter Frosting: With mixer at
high speed, beat the butter in a medium bowl until creamy. . With mixer at
medium speed, beat in the confectioners' sugar, brown sugar, and coffee
mixture until smooth. Spread the frosting over.
Makes one 11 x 7-incb cake· Prep: 30 min. . Cooking: 30-40 min.
