Recipe: Bermuda Fish Chowder

1 1/4 cups olive oil
5 ounces garlic -- minced
1 1/4 pounds carrots -- small dice
2 1/2 pounds onions -- small dice
1 1/4 pounds leeks -- small dice
1 1/4 pounds celery -- small dice
1 1/4 pounds green bell pepper -- small dice
1 1/4 pounds red bell pepper -- small dice
5 ounces hot red pepper -- fine dice
1 1/4 gallons canned diced tomatoes -- undrained
2 1/2 gallons clam broth
1 1/4 teaspoons ground bay leaves
2 1/2 teaspoons hot pepper sauce
1 1/4 cups fresh parsley -- chopped
5 ounces cornstarch
2 1/2 cups cold water
2 1/2 pounds cod -- small dice
In stockpot, heat oil. Sauté garlic, carrots, onions, leeks, celery and
peppers until soft but not brown. Add tomatoes, clam broth, ground bay
leaves, red pepper sauce and parsley. Bring to a slow simmer.
Combine cornstarch and water. Slowly stir into pot. Simmer 30 minutes.
Add cod. Simmer until fish is thoroughly cooked, 10-15 minutes.
