Recipe: Almond Orange Wafers

scant 2 tablespoons all-purpose flour
1/8 teaspoon salt
2 large eggs
1/2 cup superfine sugar
11/2 tablespoons Vanilla Sugar
2 tablespoons butter, melted
1 teaspoon finely grated orange zest
11/4 cups slivered almonds 1-2 teaspoons milk
Preheat the oven to 350°F. . Line three cookie sheets with parchment
paper. . Butter two rolling pins .. Sift the flour and salt into a small
bowl. . Beat the eggs and superfine and vanilla sugars in a large bowl with
an electric mixer until frothy .. Mix in the butter, orange zest, dry
ingredients, and almonds .. Add enough milk to form a soft dough .. Drop
rounded teaspoons of the mixture 4 inches apart on the prepared cookie
sheets. Do not place more than four cookies on each sheet. Use a metal
spatula to spread out the batter as thinly as pOSSible into 3-inch discs ..
Bake, one sheet at a time, for 8-10 minutes, or until faintly tinged with
brown on top and slightly darker at the edges .. Working quickly, use a
spatula to lift each cookie from the sheet and drape it over a rolling pin
.. Transfer to racks to cool completely .. Butter the cookie sheets again
and continue to bake in batches until all the batter has been used.
Makes 20-25 cookies· Prep: 25 min .. Cooking: 8-10 min. per batch
