Recipe: Almond Tart Pastry

2/3 cup finely ground almonds
2/3 cup sifted confectioners' sugar
2/3 cup unsalted butter, softened
1 egg, lightly beaten
1/8 teaspoon salt
1 2/3 cups all-purpose or pastry flour
Place ground almonds and confectioners' sugar in food processor fitted
with steel blade, and process until ground to a fine powder (not
paste). Add soft butter, and process until light and creamy.
Add egg and salt; process until well-mixed. Add flour all at once;
process with 8 to 10 1-second pulses until just mixed (do not overmix).
Press dough into a ball; flatten slightly with side of hand. Wrap
well, and refrigerate 4 hours or overnight.
Handling dough gently, roll out on a lightly floured surface to
slightly thicker than 1/8 inch.
