Homemade Pudding
Yield: 1 Servings
--PUDDING MIX--
2 3/4 c Instant nonfat dry milk
-powder
1 1/2 c Sugar
3/4 c Cornstarch
1 ts Salt
----PUDDING----
2 1/4 c Milk or water
1 Egg; beaten
1 tb Butter or margarine
1 1/2 ts Vanilla extract
Combine pudding mix; store in an airti ght container. For pudding, combine
1-1/4 cups mix and milk in a 2 qt saucepan. Bring to a boil over medium
heat, stirring occasionally; boil for 1 mi nute. Remove from the heat. Stir
a small amount in to egg; return to pan. Cook and stir over medium h eat
for 2 min. Remove from the heat; add butter an d vanilla. Mix well. Pour
into dishes; cover and c hill 2-3 hours. Yield: 4-5 servings (4 cups mix)
