Recipe: Zucchini Brownies

2 cups granulated white sugar
1 cup oil
3 eggs
1/2 cup milk
2 cups grated zucchini
2 1/2 cups white wheat flour
1 teaspoon baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 tablespoon vanilla
1/4 cup cocoa
Preheat oven to 350°F. Mix sugar and oil. Sift together the dry
ingredients. Add milk to eggs. Mix these with sugar and oil. Mix in dry
ingredients and vanilla. Stir in the zucchini. Pour into large cookie
sheet and bake for 20 minutes or until done.
Note* For a 3-serving scaled recipe: I use a little more sugar and at
least a tablespoon more of cocoa, more zucchini that I chopped in the
food processor, 1 egg and baked it in a 9 X 13 pan.
