Recipe: Canadian Bacon Souffle

INGREDIENTS:
1/2 cup shortening
1/2 cup flour
2 cups milk
6 egg yolks, well beaten
1 cup grated Cheddar cheese
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon Tabasco sauce
2/3 cup lightly cooked Canadian bacon cubes
7 egg whites
4 paper-thin slices Swiss cheese
TO PREPARE:
Preheat oven to 375 degrees. Grease a 2-quart casserole. Blend shorte
ning and flour together until crumbly. Stir in milk and bring to a boil.
Stir until mixture is very thick and pulling away from the sides of the pan
. Remove from heat. Let stand two minutes and add eggs yolks. Stir in gr
ated cheese, salt, pepper, Tabasco sauce and bacon. Beat egg whites until
they peak. Fold in gently. Spoon mixture into greased casserole. Cover w
ith Swiss cheese. Bake for 25 to 30 minutes.
