Recipe: Alpine Fruit Dessert

2 envelopes unflavored gelatin
1/2 cup orange pineapple or arpicot
juice
4 egg yolks
1-2 tablespoons honey or sugar
1/4 teaspoon grated lemon rind
3 tablespoons lemon juice
2 cups coarsely chopped fresh fruit
such as strawberries and bananas
blueberries and strawberries or
apples and raisins
2 cups plain yogurt
4 egg whites beaten until stiff
fresh fruit of your choice for
garnish
Place gelatin in top of double boiler; pour orange,
pineapple or apricot juice on top and let soak for 5
minutes. Heat over hot water, stirring constantly, until
gelatin mixture and yogurt. Fold beaten egg whites into
fruit and yogurt mixture. Spoon into dessert dishes or
tall parfait glasses; refrigerate until firm. Garnish
with fresh fruit.
