Recipe: Apple And Blackberry Kuchen

For the Cake Base: 2 1/4 to 2 1/3 cups white bread flour 1/2 tsp salt 2 tbls sugar a/b 1 tsp rapid-rise yeast 2 eggs 1/2 tsp vanilla extract grated zest of 1/2 lemon 1/4 tsp ground cinnamon 1/2 c lukewarm milk 1/4 c butter, softened 13x9 in jellyroll pan For the Topping: 1 egg beaten with 1 tbls cream and a pinch of ground cinnamon 1 small or 1/3 med tart apple( I used Granny Smith) 1 2/3 c blackberries zest of 1/2 lemon 1/3 c self-rising flour 2 tbls ground almonds 1/4 tsp ground cinnamon 1/4 c cold unsalted butter, diced 2 tbls granulated sugar 2 tbls granulated bown sugar 2 tbls sliced almonds Put 2 1/4 cups of the flour in a bowl with the salt, sugar, and the yeast. In another bowl, beat the egg and add them,with the vanilla extract, zest, and cinnamon, to the lukewarm milk. Stir the liquid ingredients into the dry ingredients to make a meduim-soft dough, adding more flour if necessary. Work in the soft butter and knead by hand for about 10 minutes or 5 minutes by machine. When dough is ready it will be smooth and spongy. Cover with a kitchen towel and leave until doubled in size(an hour to 75 minutes). Or leave to rise slowly overnight. Punch down and press to line jellyroll pan. You may need to let it rest for 10 minutes mid-stretch. When it's pressed out, leave to rest for 15-20 minutes, then brush with egg mixture. Preheat oven to 400F. Peel and chop the apple and toss with blackberries and zest. Set aside while making the crumb topping. Put flour, ground almonds and cinnamon in a bowl, stir to combine, then add the butter. Using tips of your fingers, rub the butter into the batter. Stop when you have a mixture that resembles clumpy oatmeal(mixture is very buttery). Fork in the sugars and sliced almonds. Tumble the fruit onto the dough and then sprinkle the crumble on top. Bake for 15 minutes, then turn down to 350F and bake for 15-20 minutes more, until dough is golden. Remove from oven, wait 5 minutes, then slice into slabs. Serves 8-10 Note: I omitted the almonds because I'm allergic, and this turned out fabulous!
