Recipe: 14 Carat Cake

14 Carat Cake

2 cups flour
2 t. baking powder
1&1/2 t. baking soda
1 t. salt
2 t. cinnamon
2 cups sugar
1&1/2 cups oil
4 eggs
2 cups grated carrots
8.5 oz. can crushed pineapple
1/2 cup chopped nuts

Sift together flour, baking powder, soda, salt and cinnamon. Add sugar, oil
and eggs and mix well. Add carrots, drained pineapple, and nuts. Turn into 3
greased and floured 9" baking pans. Bake at 350 for 35-40 minutes or until cake
tests done. Cool a few minutes in pa, then turn out and cool on racks. Fill
layers and spread top and sides with Cream Cheese Frosting.
Cream Cheese Frosting:
1/2 cup butter
8 oz. pkg. cream cheese
1 t. vanilla
1 pound sifted powdered sugar

Cream butter, cream cheese, and vanilla. Beat in sugar. If too thick, add a
little milk.
