Recipe: Dad's Big Time Burger

2 pounds lean ground beef chuck
1/2 teaspoon chili powder
1/2 teaspoon salt
1 tablespoon vegetable oil, divided
4 ounces Monterey Jack cheese, thinly sliced
1 (9-inch) round pizza bread, split
1/2 cup chili sauce or ketchup
6 slices red onion
Romaine or Bibb lettuce, shredded
Prep Time: 10 minutes
Grilling Time: 15 minutes
Serves 4-6
1. Prepare grill temperature for medium heat and
place the grill rack 4-5 inches from coals.
2. In a large bowl, use your hands to combine beef,
chili powder and salt. Turn the beef onto a large
sheet of foil or waxed paper and shape it into
a single 9-inch-round "burger." Brush top with
half of oil.
3. Invert the burger onto the grill, remove foil and brush the top with
the remaining oil. Grill until
bottom is well-browned, about 6 minutes.
Use a wide spatula to loosen the burger from
the grill, then slide a baking sheet under the
burger to keep it from breaking, and flip it over.
4. Grill until burger is almost done, about 6 minutes longer for medium, 9
minutes for well. Place
cheese on top of burger, cover grill and cook
until cheese is melted, 1-2 minutes.
5. Using the spatula, and the baking sheet if
necessary, carefully set the burger on the bottom
half of the split pizza bread. Top with chili sauce,
onion slices, lettuce and remaining bread half.
Slice into wedges to serve.
