Acapulco Beef And Dumplings

1 lb. ground beef
2 cloves garlic, minced
1 can (16 oz.) tomatoes
1 can (6 oz.) tomato paste
1 onion, chopped
1/4 c. water
1 can (4 oz.) chopped green chiles
1 T. chili powder
salt and pepper to taste
Dumplings*

Brown meat and garlic in skillet. Drain
off fat. Add tomatoes, tomato paste,
onion, water, green chiles, chili powder,
salt and pepper. Cover and simmer 5
min. Drop dumplings by rounded T. into
hot meat mixture. Simmer, uncovered,
10 min. Cover and continue cooking 10
min. longer. Makes 6 servings.
Dumplings:
3/4 c. flour
1/2 c. cornmeal
2 t. baking powder
1 t. salt
1/4 c. shortening
1 c. (4 oz.) grated sharp cheddar cheese
2 T. chopped cilantro or Chinese parsley
2/3 c. milk
Combine dry ingredients. cut shortening
into dry ingredients until mixture
becomes coarse crumbs. Stir in cheese
and cilantro. Ad milk and mix until dry
ingredients are moistened. cook as
directed.
