Recipe: Almond Crescents

a.. 1/2 pound almond paste
b.. 1/2 cup confectioner's sugar
c.. 1/2 tsp. ground cinnamon
d.. 1 egg white
e.. 1 cup finely ground almonds
f.. 1/2 tsp. almond extract


Butter a cookie sheet.

Mix all the ingredients except almonds thoroughly.

Roll in a long roll. Cut off pieces about 1 inch long. Shape each one into a crescent and roll it in the ground almonds

Place on the prepared sheet. Bake at 300º for 20 minutes.

I use a bittersweet chocolate frosting for these crescents.

Bittersweet Chocolate Frosting:

3 ounces bittersweet chocolate
3 Tbsp. sweet butter
1/2 cup milk
2 cups confectioner's sugar
Put the first three ingredients in a saucepan and stir over low heat until they are all blended. DO NOT BOIL. Add enough of sugar to give the desired consistency. Stir and cook for a few minutes, then use the frosting on both ends of the crescents
