Recipe: Chili Con Carne

Chili Con Carne
1 (5 lb.) chuck roast
1/4 c. oil
2 lbs. ground beef
3 onion, chopped
6 cloves garlic, minced
2 bell peppers, chopped
3 cans (1 lb. ea.) tomatoes
1 qt. water
8 T. chili powder
4 T. cocoa
1 to 2 T. salt
4 t. oregano
2 t. cumin
1 can (4 oz.) diced green chiles
4 cans (1 lb. ea.) red kidney beans,
undrained
Cut meat into 1" cubes. Brown in hot oil.
Remove cubes from pan. Brown ground
beef. Drain off fat. Brown onions, garlic
and bell pepper. Add beef cubes to meat
mixture. Stir in tomatoes, water, chili
powder, cocoa, salt, oregano, cumin and
green chiles. Cover and simmer 1 1/2
hours or until meat is tender. Gently
stir in kidney beans. Simmer 15 min.
Makes 8 to 10 servings.
