Recipe: Chicken Gumbo

2 1/2 lbs. chicken- I use boneless skinless breasts
1/4 lb. smoked ham, diced
2 tbls. margarine
14 1/2 to 16 oz. tomatoes
1 1/2 qts. water
1 lb. okra, sliced
1 cup sliced onion
3/4 cup chopped bell pepper
1 tbls. minced parsley
1 tbls. salt
1/4 tsp. pepper
1 sm. bay leaf
1 tbls. gumbo file' powder
4 cups hot cooked rice
Procedure:
Cook chicken and ham in melted butter until light brown. Add tomatoes, water, okra, bell pepper, parsley, salt, pepper, and bay leaf. Heat to boiling. Reduce heat, cover and simmer 30 to 40 min., or until chicken is tender.
Remove chicken from bones, but leave in lg. pieces. Return meat to gumbo. Discard bay leaf. Just before serving sprinkle file' powder lightly over gumbo, stirring constantly. Heap hot rice into soup bowls. Ladle gumbo over rice.
