Recipe: Cheesecake Bites

Cheesecake Bites

Crust:

3/4 cup butter, softened

1/2 cup sugar

1 1/4 cups flour

1 1/2 cups ground walnuts

Heat oven to 350 degrees. Beat butter and sugar, add flour and nuts.
Blend
thoroughly.

Press dough into bottom of 10-by-15-inch jelly roll pan (not up
sides).

Bake 10 minutes. Place on rack to cool.

Filling:

3 packages (8 ounces each) cream cheese, softened

1 1/4 cups sugar

1 teaspoon vanilla

1/2 tablespoon almond extract

3 large eggs

Beat cream cheese, sugar, vanilla and almond extract until smooth.
Beat
in
eggs one at a time until mixture is blended thoroughly. Spread over
crust.

Bake 20 minutes (top should be set but center creamy). Place on rack
to
cool
5 minutes.

Topping:

2 cups sour cream

1/2 cup sugar

Maraschino cherries

Stir together sour cream and sugar; spread evenly over cheesecake.
Return to
oven and bake 5 minutes.

Cool on wire rack. Refrigerate to chill completely before cutting.
Cut
into
1-inch squares and decorate with 1/2 of a maraschino cherry on each
square.
