Recipe: Dried Cherry Salsa

1 c. dried cherries, chopped
1/2 small red onion, finely diced
1/2 Tbsp. molasses
Juice of 1 lime
1 yellow pepper, cut in 1-inch strips as fine as you can slice
1/4 c. deeply roasted green pumpkin seeds
1 Tbsp. olive oil
1 tsp. green peppercorns, cracked
2 Tbsp. chopped cilantro
Kosher salt
Cayenne pepper
Combine all ingredients and season with the salt and cayenne. Set
aside till use.
