Recipe: Spinach Salad With Zesty Bleu Cheese Dressing

1/4 cup white vinegar
2 teaspoons Dijon mustard
1 clove garlic minced
1/2 teaspoon freshly ground pepper
2/3 cup olive oil
1 4 ounce package crumbled bleu cheese
1 10 ounce package fresh spinach
1/2 8 ounce package fresh mushrooms
1 cup grape or cherry tomatoes halved
1/2 small red onion thinly sliced
Creole Croutons
Whisk together first four ingredients. Gradually whisk in oil. Add cheese
and stir gently. Combine spinach and next three ingredients. Drizzle with
dressing; tossing to coat. Sprinkle with creole croutons. Serve immediately.
Makes 4 to 6 servings.

Creole Croutons
5 1 inch thick white bread slices cubed
1/4 cup freshly grated parmesan cheese
1/4 cup butter or margarine melted
1/2 tablespoon creole seasoning
Combine all ingredients in a large zip-top plastic bag. Seal bag and shake
well to coat. Arrange seasoned bread cubes in an even layer on an aluminum
foil lined baking sheet. Bake at 300 degrees for 30 minutes or until
croutons are crisp and golden.
Makes about 8 cups
