Recipe: Golden Shrimp Pate On Crostini With Caspian Sauce

Serves 4
The Caspian Sauce:
1 cup mayonnaise
1/4 cup heavy cream
1/4 cup chile sauce
1/4 cup finely chopped red bell pepper
1/4 cup green onions
2 tablespoons fresh lemon juice
1 teaspoon Worcestershire sauce
1 teaspoon dill weed
Salt and pepper to taste
The Shrimp Pâté:
1/2 pound raw shrimp, peeled and deveined
1 tablespoon butter, chopped
2 green onions, chopped
1/8 cup chopped fresh parsley
1 teaspoon soy sauce
4 black olives (optional)
1/4 teaspoon salt
Pinch pepper
1 baguette of French bread, sliced 1/2-inch-thick
1/2 cup peanut oil, for frying
Mixed greens
~~~ For the sauce:
In a medium bowl combine all the
ingredients, mix well, and refrigerate.
For the shrimp, preheat the oven to 350°F.
In a food processor or blender, process
the shrimp, butter, and green onions to
a smooth, fluffy paste.
Add the parsley, soy sauce, black olives
(optional), salt, and pepper, and set aside.
Toast the bread slices in the oven until
crisp, about 5 minutes.
Spread the toast with the shrimp mixture.
In a deep skillet, pour in enough oil to
make a depth of 1 inch.
Heat the oil to 350°F, then reduce to low.
Add a few toasts, shrimp-side-down, and fry
until golden brown, about 1 minute.
Turn the toasts over and cook until lightly brown.
Remove, drain on paper towels, and repeat with
the remaining toasts.
To serve, place the toasts on a bed of mixed
greens and finish with a dollop of the caspian
sauce on the top.
