Recipe: Cherry Christmas Jam

2 cans pitted tart red cherries in water, drained (14.5 oz. each)
6 cups sugar
1/3 cup freshly squeezed lemon juice
2 pouches liquid fruit pectin (3 oz. each)
1 t. almond extract
1/2 t. red liquid food coloring
Process cherries in a food process until coarsely chopped. In a heavy Dutch
oven, combine cherries, sugar, and lemon juice. Stirring constantly over high
heat, bring mixture to a rolling boil. Stir in liquid pectin. Stirring
constantly, bring to a rolling boil again and boil 1 minute. Remove from heat; skim
off foam. Stir in almond extract and food coloring. Spoon jam into heat
resistant jars. Cover and cool to room temperature. Store in refrigerator. Makes about
6 1/2 cups jam.
