CARROT CAKE WITH CREAM CHEESE FROSTING

2 C SHREDDED CARROTS (ABOUT 2 LRG)
¾ C SUGAR
1 CAN (4OZ) CRUSHED PINEAPPLE
1 JAR (4 OZ) CARROT PUREE
4 EGG WHITES OR ½ C LIQUID EGG SUBSTITUTE
2 TSP VANILLA EXTRACT
½ TSP SALT
1 ¼ C CAKE FLOUR
1 ¼ C OAT BRAN
2 TSP BAKING SODA
1 ½ TSP GRND CINNAMON
1 PKG (8 OZ) FAT FREE CREAM CHEESE

PREHEAT OVEN 425. COAT A 9' ROUND CAKE PAN WITH NONSTICK SPRAY.

IN A LRG BOWL, MIX CARROTS ½ C SUGAR, PINEAPPLE (WITH JUICE), CARROT
PUREE, EGG WHITES OR EGG SUBSTITUTE, VANILLA AND SALT.
IN ANOTHER BOWL COMBINE FLOUR, OAT BRAN BAKING SODA AND CINNAMON. FOLD
IN CARROT MIXTURE JUST UNTIL COMBINED.

POUR INTO THE PREPARED PAN AND BAKE 30 MIN OR TILL LIGHTLY BROWNED AND
FIRM TO THE TOUCH. COOL IN THE PAN ON A RACK 10 MIN. REMOVE FROM THE PAN.

IN A MEDIUM BOWL MIX WITH AN ELECTRIC MIXER CREAM CHEESE AND REMAINING
¼ C SUGAR. SPREAD EVENLY OVER CAKE.

MAKES 12 SERV AT 3 WW PTS
