Recipe: Amaretto Brownies

Makes 36 brownies
Brownies:
1 1/2 cups sugar
2/3 cup vegetable oil
3 eggs, beaten
1 cup flour
2/3 cup unsweetened cocoa powder
1/4 cup amaretto
1 cup almonds, chopped
Frosting:
1/2 cup butter
1/4 cup buttermilk
1/4 cup unsweetened cocoa powder
16 ounces powdered sugar
2/3 cup almonds, chopped, optional
Combine all brownie ingredients in a large bowl and mix well. Spread
into a greased 13-inch-by-9-inch pan. Bake at 350 for 25 minutes. To
make frosting, melt butter in a saucepan. Add buttermilk and cocoa.
Slowly add powdered sugar and continue stirring until smooth. Frost
brownies when they are cooled and sprinkle with nuts, if desired.
Per brownie: 192 cal.; 2 g pro.; 26 g carb.; 9 g fat (3 sat., 3
monounsat., 3 polyunsat.); 25 mg chol.; 9 mg sod.; 1 g fiber; 21 g
