Recipe: Apple And Apricot Crisp

1/3 cup finely chopped dried apricots
2 tablespoons brandy
1/4 cup all purpose flour
3 tablespoons firmly packed dark brown sugar
1/8 teaspoon salt
3 tablespoons cold unsalted butter, cut into bits
1/3 cup old fashioned rolled oats
2 tablespoons sliced almonds
2 Golden Delicious apples, peeled, quartered, cored, and sliced thin crosswise
Directions:
In a small bowl let the apricots soak in the brandy for 5 minutes. In a bowl blend the flour, the brown sugar, the salt, and the butter until the mixture resembles coarse meal, add the oats and the almonds, and toss the mixture until it is combined well.
In a 9 inch (4 cup) glass pie plate, toss together the apples and the apricot and brandy mixture, sprinkle the oat mixture over the top, and bake the crisp in a preheated 400°F oven for 25 minutes, or until the apples are tender and the topping is browned lightly.
Serves 2 generously.
