Recipe: Brown Bag Burritos

Brown-Bag Burritos
1 can (6 oz.) chunk chicken, drained (the low fat one)
1 tablespoon fat-free mayonnaise (I use honey mustard instead)
1 teaspoon lemon juice
4 flour tortillas
1/4 cup green onions, chopped
1 tomato, diced
1/2 cup non-fat Cheddar cheese, shredded
In a small bowl, combine chicken, mayonnaise, and lemon juice.
Steam tortillas between damp paper towels in a microwave oven.
Spread the chicken mix in the center of each tortilla. Top with onion,
tomato, and Cheddar cheese. Fold the bottom edge of the tortilla up, and
roll the sides tightly to form a burrito.
Makes 4 servings
