Recipe: Habanero Hot Pepper Sauce Hot

Cut chile peppers in half wearing rubber gloves and outside in an open
area. Remove the seeds and ribs,using spoon.
Grind in food processor outside, 3 quarts of the meat halves. Place in a
large stewer or pot. Mince in the processor 7 elephant garlic
cloves, 1-1/2 cups cooked carrots -puree these. Chop 3 large onions or 3
cups minced fine into the pot. Add 2 cup brown sugar, 1c lemon or lime
juice, 2 cups ketsup,1 tablespoon salt, 8 cups cider vinegar. Mix well and
simmer over medium heat 20 mins. Take a Gun hold it to the helpers head
take a teaspoon and dip the sauce up for a taste test. If they do not
drink all the water in the county up, let cool and repeat the test. If too
strong add 1 cup more sugar, 1/2 cup vinegar, 1/2 cup more lime
juice..Cook 5 to10 mins, just to dissolve sugar. Repeat test.Place in clean
jars and water bath 5 mins.
REMEMBER THIS SAUCE MELLOWS AS IT SETS IN
STORAGE AND IS BETTER AFTER 2 MONTHS AND LONGER. USE ON
PEAS, BEANS, BEEF, FISH, PIZZA, FRIED SQUASH, FRIED OKRA,
FRIED GREEN TOMATOES, AND IN SOUPS,STEWS,etc...ENJOY AND
