Recipe: Healthy Baked Beans

1 cup sliced mushrooms
1/2 cup seasoned breadcrumbs
2 cups cooked navy beans
1/2 bunch (about 1/2 pound) spinach, rinsed and julienned
1/2 red onion, diced
2 cups shredded low-fat cheddar cheese
1 tsp. Cajun seasoning or similar spicy seasoning, or to taste
5 Tbl. soy "bacon" bits
4 Tbl. grated Parmesan cheese
1/2 cup chopped flat-leaf parsley for garnish
Preheat the oven to 400 degrees F. Spray a 2-quart bak ing dish with
nonstick cooking spray, and set aside.
Layer the sliced mushrooms on the bottom of the dish, and sprinkle with the
breadcrumbs to form a crust. Stir together the beans, spinach, onion,
cheddar and season ing in a large mixing bowl. Spoon into the baking dish.
Combine "bacon" bits and Parmesan cheese, and sprinkle overtop.
Bake the beans for 20 minutes, remove from the oven, garnish with the
parsley and serve.
