Recipe: Pork In Milk Gravy

Pork in Milk Gravy
2 lb pork tenderloin, cut into 3/4 inch thick slices
Flour for dredging
Salt and pepper to taste
2 Tbsps butter
2 cups milk
Trim excess fat from tenderloin. Dredge tenderloin slices in flour. Season
with salt and pepper. Brown in butter at 350 degrees in electric skillet.
Reduce temperature to 225 degrees; cover skillet. Cook for 30 minutes to 1
hour or until pork is tender. Add milk. Heat, uncovered, until bubbling hot.
Serve immediately. Yield 6 to 8 servings.
