's Mama's Potato Salad Margaret Estelle Carithers Legge Mama didn't measure, so can just give you general instructions. As many potatoes as you need. Boil in jackets, cool, peel and cut into cubes. Marinate in French salad dressing for at least 1 hour or longer. Drain WELL. Add boiled eggs, ( chopped), green onions, ( chopped), pickles,( chopped ) or sweet pickle relish. Add Mayonnaise to taste. Add salt and pepper and mix well. This is the potato salad that she always made for Christmas, but we loved it so much that we would ask for it year round.. The French dressing will turn the potatoes red or pink, depending on the amount of time that you marinate them. At Christmas time, she would marinate overnight. Note: I like to marinate in Catalina Dressing.
